This was a hard week and apologies for not being up to date on the website. We relied heavily on on stocked convenience foods, leftovers from last week and ate out twice. Still, I did accomplish some good things in the kitchen. The farmer's market yielded some adorable eightball squash (mini squash approx 1" to 1 1/2" in diameter) and a local grocer had a great price on mushrooms. I got a little overly ambitious and bought WAY too many beets, most of which I gave a way at my last book club discussion (have Russian friends....very handly for getting rid of excess beets).
