Baked Pasta & Cheese

Cook pasta until just shy of al dente. Preheat oven to 375F. Warm milk in the microwave for a few minutes (do not boil). In a deep soup pot, melt the butter over medium heat and add the flour. Stir constantly until the mixture turns a light brown. Raise heat to medium high and slowly incorporate the milk with a whisk. When the sauce is stable, lower the heat to low and add the salt, pepper and nutmeg. Stir in cheese 1 cup at a time. Add ¾ of the pasta into to the cheese sauce and stir until fully mixed. Pour into a buttered 9x13 baking dish. Sprinkle with panko crumbs and drizzle olive oil lightly over the casserole. Bake for 30 minutes.
