Sausage & Peppers
This recipe can be used as the base for a sandwich or added to pasta sauce. Generally I can get 4 sandwiches and 2 servings of pasta from these ingredients. Serve with salad to contrast the heaviness of the sausage.- The Main Show
- 1 Tbsp Canola Oil
- 1 Large Onion, halved and sliced thinly
- 1 Green Bell Pepper, sliced thinly
- 1 Red Bell Pepper, slice thinly
- 2 cloves Garlic, minced
- 5 Chicken Sausages (we like spicy andouille), 1/4" slices on the diagonal

- Good Sandwich Rolls w/Dijon Mustard

- 1/2 Lb Penne Pasta w/2 Cups Pasta Sauce
Heat 1/2 of the oil over medium heat in a saute pan. Add the onions and cook until soft (7 minutes). Remove from pan and add the peppers and saute for 7 minutes, or until soft. Add the garlic and heat for 2 minutes. Remove from pan. Heat the remaining oil in the pan and increase the heat to medium high. Sear the sausage slices for 2 minutes a side and add the onion and peppers. Add 1 tsp of salt and 1/2 tsp of black pepper. Serve in sandwish rolld with mustard or add to a pasta sause and toss with penne.
