Sausage & Peppers

This recipe can be used as the base for a sandwich or added to pasta sauce. Generally I can get 4 sandwiches and 2 servings of pasta from these ingredients. Serve with salad to contrast the heaviness of the sausage.

Heat 1/2 of the oil over medium heat in a saute pan. Add the onions and cook until soft (7 minutes). Remove from pan and add the peppers and saute for 7 minutes, or until soft. Add the garlic and heat for 2 minutes. Remove from pan. Heat the remaining oil in the pan and increase the heat to medium high. Sear the sausage slices for 2 minutes a side and add the onion and peppers. Add 1 tsp of salt and 1/2 tsp of black pepper. Serve in sandwish rolld with mustard or add to a pasta sause and toss with penne.
